The next recipe I am going to share is Tomato Rice – an easy to make one pot meal. This tomato rice is prepared in pressure cooker. This can be prepared in no time with less effort. So when I am too lazy to cook anything or when I have time crunch, this is my go to recipe. This is perfect for packing lunch too.

Let us see how to prepare this tomato rice. Heat oil in a pressure cooker, add mustard seeds, cumin seeds and then add urad dal, channa dal and fry. Then add onions, garlic, chillies and curry leaves and fry for a minute. Now add tomatoes, turmeric powder, asafoetida and mix well and cook for 2-3 minutes. Then add washed rice, required water, salt and pressure cook. Wait till the pressure releases, then gently mix well , garnish with cilantro and serve. Very easy isn’t it ? Rice : 1 1/2 Cup
Oil : 2 Teaspoon
Mustard seeds : 1/2 Teaspoon
Cumin seeds : 1/2 Teaspoon
Urad dal : 1 Teaspoon
Channa dal : 1 Teaspoon
Onion : 1 medium sized (chopped)
Green Chillies : 2 nos.
Curry Leaves : 1 Sprig
Tomatoes : 3 medium sized (finely chopped)
Garlic : 4-5 cloves (finely chopped)
Asafoetida : a pinch
Turmeric powder : 1/4 Teaspoon
Salt : to taste
Cilantro : handful
Heat oil, add mustard seeds, cumin seeds, then add urad dal and channa dal and fry for a minute.
Then add sliced onions, garlic, green chillies and curry leaves and fry.
Add tomatoes, asafoetida, turmeric powder, mix well and cook for 2 – 3 minutes.
Then add the washed rice, required water and salt mix well and pressure cook for one whistle in medium high heat.
Wait till the pressure releases, then gently mix well, garnish with cilantro and serve.
Flavour totally depends on the kind of tomato used. I have used tomatoes on the vine.
Instead of chopping the tomatoes, you can puree and add them too.
Instead of green chillies, you can use chilli powder too.
