Let us see how to prepare this sweet kozhukattai. First powder the cardamom and keep it aside. Then grate the jaggery and add it to a sauce pan with water and heat it till jaggery is dissolved.  Filter this solution and add it to a heavy bottomed pan, add more water to it and bring it to boil. Then add  cardamom powder, grated coconut, ghee to this and mix well. Reduce the heat and add rice flour little by little and continue to mix such that there are no lumps. Keep stirring till the dough reaches required consistency. Turn off the heat and let it cool slightly (the heat you can tolerate while shaping kozhukattai). Keep it covered till then. Take the dough, shape it into kozhukattai, arrange them in a steamer or idli plate and steam cook for about 10-12 minutes till they are cooked and turns shiny. Turn off the heat. Sweet pidi kozhukattai is ready.

Notes :

  • I have used 1/2 cup of jaggery. If you prefer more sweetness, you can add another 1/4 cup to 1/2 cup of jaggery.
  • Colour of the kozhukattai depends on the colour of jaggery.
  • I have used store bought rice flour, you can use homemade rice flour too.
  • The quantity of water required depends on the quality of rice flour.
  • Instead of adding grated coconut, you can cut fresh coconut into bite sized pieces and add.
  • To check if you have attained the right consistency of dough before turning off the heat, you can grease your hand with oil and roll it with fingers, you should be able to get a clean ball with out being sticky.
  • The number of kozhukattais obtained depends on the size of the kozhukattai you make.
  • If after turning off, you find that the dough consistency is not right, don’t panic. It can be rectified. If it is dry, keep warm water handy, sprinkle them and knead till you get a proper dough. If the dough is too sticky, add some rice flour and knead. Add little by little and knead till the dough is of right consistency.
