Today I am here with Red currant muffins. Red currants are bright red, translucent berries. Only after coming here to the UK I was introduced to red currants. Though these are summer berries, they are available through out the year in the super markets here. I got it last week and baked muffins with it. Tart flavour of the red currants compliment these mildly sweet muffins well. We really enjoyed these muffins.

Red Currant Muffins

Red Currants : 1 Cup
All Purpose Flour : 2 Cups
Baking Powder : 2 Teaspoon
Salt : 1/2 Teaspoon
Butter (Unsalted) : 1/2 Cup
White Sugar : 1 Cup
Large Eggs : 2 Nos.
Vanilla Extract : 1 Teaspoon
Almond Extract : 1/4 Teaspoon
Milk : 1/2 Cup + 2 Tablespoons
Flaked Almonds : As required, to top (optional)
Pre heat the oven to 350 F / 180 C / 160 Fan / Gas mark 4. Line the muffin pan with liners and keep it aside.
De-stem and wash red currants. Drain excess water and toss them in 2 Tablespoon of flour such that it is well coated and keep it aside.
Beat butter and sugar together. Then add eggs and beat well. Add vanilla extract and almond extract and mix well.
Sift the remaining all purpose flour, baking powder and salt together.
Add this flour mixture little by little to the butter mixture, alternating with milk and mix well to form a smooth batter.
Now add the redcurrants to this batter and mix well such that they are evenly distributed in the batter.
Fill the muffin pan with batter such that each cup is about 3/4th full. Top it with flaked almonds.
Bake for about 20 – 25 minutes till the muffins are done. To check the done’ness insert a tooth pick and it has to come out clean.
Let it cool then enjoy.
Make sure all the ingredients are room temperature.
Adding almond extract and flaked almonds are optional. You can add any other nuts too.
Instead of using liners, you can grease the muffin pan with butter and then flour it. This will ensure that the muffins doesn’t stick to the pan.
Baking time varies with each oven. Check yours accordingly.
