Pavakkai poriyal is a simple South Indian style stir fry with bitter gourd. It is quick and easy to make. Pavakkai is a healthy vegetable and is known to control blood sugar. It is good for people suffering from diabetics. It is my favourite vegetable and I cook it at least once in 2 weeks.
I know there are many people who hate bitter gourd because of its bitter taste and want to try something to cut down the bitterness to eat this vegetable. Here are few tips for that. Soaking the bitter gourd in salt water mixture cuts down the bitter ness. Adding jaggery or sugar can also cut down the bitterness. Addition of grated coconut reduces the bitterness too. Following these tips will not eliminate the bitterness but only reduce the bitterness.
Let us see how to prepare the bitter gourd stir fry/ Pavakkai Poriyal. First chop bitter gourd and soak them in salt and water solution. Let them soak for at least 10 minutes. Then heat oil in a pan, add mustard seeds, then add chopped onions and curry leaves fry for a minute. Drain excess water and add the bitter gourd to the pan, then add turmeric powder, chilli powder, coriander powder, required salt, mix well and then add required water. Cover the pan and cook till the bitter gourd is cooked. Then open the pan and cook till excess water, if any is dried up and then add grated coconut and turn off the heat.

Bitter gourd / Pavakkai : 250 gms (3-4 nos)
Onion : 1 no.
Oil : 2 Teaspoons
Mustard seeds : 1/2 Teaspoon
Curry leaves : 1 sprig
Turmeric Powder : 1/4 Teaspoon
Chilli Powder : 1 Teaspoon
Coriander Powder : 2 Teaspoons
Salt : To taste
Coconut (grated) : 3 Tablespoons
Cut bitter gourd, remove the seeds and chop them. Mix water and salt, add the cut bittergourd into the mixture. Let it soak for atleast 10 minutes.
Heat oil in a pan, add mustard seeds, then add chopped onions and curry leaves and fry till onions brown slightly.
Drain water from the bitter gourd, squeeze extra water, if any and add the bitter gourd to the pan.
Then add turmeric powder, chilli powder and coriander powder, salt and required water. Mix well. Cover the pan and cook till the bittergourd is done.
Open the pan and cook further to dry up any excess liquid and the stir fry is dried.
Add the grated coconut, mix well and turn off the heat.
Pavakkai poriyal is ready.
Soaking in salt water mixture is optional. It is done to reduce the bitterness. You can skip it if you want.
Instead of adding chilli powder and coriander powder, you can add 2 tablespoons of sambar powder.
Adjust chilli powder as per your heat tolerance level.
You can add 1/2 teaspoon of jaggery to cut down the bitterness too. But I didnt add it.
