Naan is a leavened bread usually cooked in tandoor / clay oven. These restaurant style naan bread can be prepared at home without tandoor. I prepare them at home in the stove top on a tawa / griddle. All Purpose Flour : 3 Cups
Salt : To taste
Yogurt : 1/4 Cup
Butter (melted) : 1/4 Cup + more
Active dry yeast : 2 Teaspoons
Sugar : 1 Teaspoon
Warm water (@110 F) : 3/4 Cup
Kalonji / nigella seeds : as required (optional)
In a bowl, mix active dry yeast, sugar in warm water (at temperature of 110 F) and let it sit for 7 – 8 minutes till it is frothy.
In another bowl, add all purpose flour, salt, yogurt, melted butter, yeast solution and knead well. If needed, sprinkle more water and knead into a soft dough.
Let it rest for 1.5 hours – 2 hours till it has doubled.
Knead the dough again and divide into equal sized balls and let it rest for 5 minutes.
Heat griddle, take one ball, flatten it using a rolling pin. Apply butter and cook on one side till bubbles start to appear, then apply butter, flip it to other side and cook. Remove from heat.
Repeat the process for rest of the dough. Brush with melted butter and serve it warm.
Instead of melted butter, you can use oil.
While flattening the dough, optionally, you can sprinkle some nigella seeds.
