Today I am here with Muttai Kuzhambu recipe.  This is a tamarind based curry prepared with ground coconut and boiled eggs. I love egg kuzhambu so much, especially the one my mom makes. I always request her to make it for me whenever I visit her. This egg curry is adapted from her recipe, with few changes. The curry is tasty yet could not match the taste of hers. There is something called ‘kaipakkuvam’ in tamil which means the expertise that comes with years of cooking along with her ‘special touch’. This gravy can be served with idly, dosa or rice.

Muttai Kuzhambu Recipe

Muttai Kuzhambu – South Indian style tangy curry with boiled egg, coconut and tamarind. This gravy can be had with idli, dosa or rice.

Ingredients :

To roast and grind :

  • Oil : 2 Teaspoon
  • Cumin Seeds : 1 Teaspoon
  • Coriander Seeds : 1 Tablespoon
  • Dried Red Chillies : 3 – 4 nos.
  • Onion : 2 medium sized(chopped)
  • Grated Coconut : 1/4 Cup

Other Ingredients :

  • Eggs : 5 – 6 nos.
  • Tamarind : about size of a lemon ball.
  • Oil : 1 Teaspoon
  • Mustard Seeds : 1/2 Teaspoon
  • Fenugreek Seeds : 1/4 Teaspoon
  • Curry Leaves : 1 Sprig
  • Turmeric powder : 1/4 Teaspoon
  • Salt : to taste
  • Cilantro : handful

Instructions :

  1. Soak Tamarind in luke warm water. Then extract the juice and discard the pulp.
  2. Boil eggs, then peel the shells and keep it aside.
  3. In a pan, add cumin seeds, coriander seeds, red chillies and fry for a minute. Then add onions and fry till they turn slightly golden. Add grated coconut, mix well and turn off the heat.
  4. Let this coconut mixture cool. Transfer this mixture into a mixer, add little water and grind it finely.
  5. Heat oil, add mustard seeds, fenugreek seeds, curry leaves and fry for a minute.
  6. Then add the ground coconut paste, turmeric powder, extracted tamarind juice along with required water (as per the consistency required) and salt.
  7. Mix well and cook in medium high heat till it comes to boil.
  8. Now add the boiled eggs, reduce the heat and let it simmer (in low heat) for 5 – 6 minutes and turn off the heat.
  9. Garnish with cilantro and serve it.

Notes :

  • Adjust the number of eggs as per your requirement.
  • Instead of adding whole coriander seeds and dried red chillies, you can add coriander powder and red chilli powder too.
  • Adjust the number of chillies / amount of chilli powder as per personal heat tolerance level.
  • Optionally, you can add garlic along with curry leaves fry in step 5, fry and then proceed with preparing the gravy. This gives a garlic flavour to the gravy.

How to make muttai kuzhambu with step by step pictures?

  • Soak tamarind in lukewarm water. Then extract the tamarind juice and discard the pulp.

  • Boil eggs and peel the shells. Then make slit on them and keep it aside.

  • In a pan, heat oil add cumin seeds, when they sputter, add red chillies and coriander seeds.

  • Add diced onions and cook till they turn translucent and slightly brown.

  • Then add grated coconut, mix well and turn off the heat.

  • Let the mixture cool. Then transfer it to a mixie and add little water and grind it finely.

  • Now return the pan to heat, add oil, then add mustard seeds, fenugreek seeds and curry leaves. Fry for a minute.

  • Then add the ground coconut mixture and turmeric powder.

  • Add the extracted tamarind juice, required water (depending on the consistency required) and salt, mix well.

  • Bring it to boil.

  • Then add the boiled eggs and let it simmer for 5 – 6 minutes.

  • Then turn off the heat.
