Today I am here with mushroom poriyal recipe. This is a quick and easy to prepare, South Indian style stir fry.  This mushroom stir fry  can be served as a side dish to rice and also can be used as a filling in sandwich. And also this is vegan and gluten free. My kids love mushroom and I often prepare it.  They finish their food without any complaints when served with mushroom.

Mushroom Poriyal

Quick and easy to prepare South Indian style Stir fry made with Mushroom. This can be served as a side dish to rice or as a filling for sandwich.

Ingredients :

  • Mushroom : 500 gms
  • Oil : 2 Teaspoon
  • Mustard seeds : 1/2 Teaspoon
  • Cumin seeds : 1/2 Teaspoon
  • Onion : 1 medium sized
  • Garlic : 4 – 5 cloves
  • Curry Leaves : 1 sprig
  • Turmeric Powder : 1/4 Teaspoon
  • Chilli Powder : 1 Teaspoon
  • Salt : To taste
  • Cilantro : a hand ful (optional)
  • Grated Coconut : 1/4 Cup (optional)

Instructions :

  1. Lightly rinse the mushrooms and pat it dry with paper towel. But do not soak it in water as mushroom tends to absorb water. Then slice them and keep it aside.
  2. Then finely chop onions and crush garlic and keep it ready. Instead of crushing garlic, you can finely mince them and add too.
  3. Heat oil in a pan, add mustard seeds and cumin seeds, fry till they sputter. Then add onions and curry leaves and fry till onions turn translucent.
  4. Then add crushed garlic, turmeric powder and chilli powder. Mix and cook till raw smell goes.
  5. Add mushrooms, required salt, mix well, cover and cook. If it had absorbed water while rinsing, it will release water. So no need to add water. If not, sprinkle water and cook.
  6. Cook till the mushroom is cooked and excess liquid (if any) has evaporated. Turn off the heat and serve it warm.

Notes :

  • I have used chestnut mushrooms here. You can also use white button mushrooms and portobello mushrooms in this recipe.
  • Instead of adding chilli powder, you can add green chillies. Adjust the number of green chillies as per your heat tolerance level.
  • You can add fresh grated coconut after turning the heat off, mix well and serve. You can also garnish with chopped cilantro.
