Methi Pulao is a flavourful one pot meal made with fresh fenugreek leaves. Methi leaves is also called Vendhaya Keerai in Tamil. This pulao is very easy to make and it can be prepared in a jiffy. This pulao is vegan and gluten free.  You can serve this pulao with raitha or any other spicy side dish as per your preference.

Methi Pulao Recipe

Easy recipe for making Methi Pulao. Vegan one pot meal.

Ingredients :

  • Fenugreek leaves / Methi leaves : 2 Cups (cleaned and washed)
  • Basmati Rice : 2 Cups
  • Onions : 2 nos.
  • Green Chillies : 2 – 3 nos.
  • Garlic : 5 cloves
  • Ginger : 1″ long
  • Oil : 1 Tablespoon
  • Fennel seeds : 1/2 Teaspoon
  • Cloves : 4 – 5 nos
  • Cinnamon : 1 ” long
  • Cardamom : 4-5 nos.
  • Bay leaves : 2 nos.
  • Salt : As per taste
  • Water : As required

Instructions :

  1. Wash Basmati Rice, drain excess water and keep it aside.
  2. Do the required preparations – Slice onions, slit green chillies, finely chop / mince garlic and grate ginger.
  3. In a pressure cooker, heat oil, add fennel seeds, cloves, cinnamon, bay leaves, cardamom and fry for a minute.
  4. Then add the sliced onions, green chillies and fry till onions turn translucent.
  5. Next add garlic and ginger and fry.
  6. Then add the fenugreek leaves and cook till it is wilted.
  7. Add rice, required water, salt and cook in medium high heat for a whistle and turn off the heat.
  8. Wait till the pressure releases and gently fluff up the rice and serve it warm.

Notes :

  • Adjust number of green chillies, as per your heat tolerance level.
  • Quantity of water added to rice varies with different quality of rice. I used 3 cups of water for 2 cups of rice. Adjust yours accordingly.
  • For more flavour, you can add a cup of coconut milk. (so for 3 cups of water, it is 1 cup of coconut milk and 2 cups of water).
