Today I am here with Sambar powder recipe. It is the combination of spices that are roasted and ground. This powder is used to prepare flavourful sambar and also in few other recipes. There are different versions of making sambar powder with different ratios and this is my version of sambar powder.
How to make sambar powder from scratch?
First roast channa dal and urad dal. Then roast coriander seeds, cumin seeds, fenugreek seeds and whole black pepper. Finally roast red chillies. Let them cool and then powder them together with turmeric powder and asafoetida. Let the powder cool and then transfer it to airtight container and use them when required.

Coriander Seeds : 1 Cup
Dried Red Chillies : 1 Cup
Channa Dal : 1 1/2 Tablespoon
Urad dal : 1 1/2 Tablespoon
Cumin Seeds : 2 Tablespoons
Whole black pepper : 2 Tablespoons
Fenugreek Seeds : 1 1/2 Teaspoons
Turmeric Powder : 1/2 Teaspoon
Asafoetida : 1/2 Teaspoon
Dry roast chana dhal, urad dhal in a low heat till they lightly change in color.
Then roast coriander seeds, cumin seeds, pepper, fenugreek seeds till nice aroma starts to emanate.
Finally roast the red chillies.
Let them cool completely.
Now grind them together with turmeric and asafoetida.
The ground powder may be warm, let it cool. Store them in a air tight container and use.
