Today I am here with eggless cranberry muffins recipe. These soft and moist muffins are made with fresh cranberries. We love muffins at home and I bake muffins often at home. The base recipe for the muffins will be same for most of the eggless versions, except for some minor tweeks. Also depending on the availability, I use different fruits.  I recently baked these cranberry muffins that are egg free and butter free. These muffins came out so soft and my kids loved it.

Eggless Cranberry Muffins Recipe

Easy recipe for soft muffins made with fresh cranberries. These muffins are egg free and butter free.

Ingredients :

  • Fresh Cranberries : 1 Cup
  • All Purpose flour : 1 1/2 Cup
  • Baking Powder : 1 Teaspoon
  • Baking Soda : 1/2 Teaspoon
  • Salt : 1/2 Teaspoon
  • Yogurt : 1 Cup
  • Sugar : 3/4 Cup
  • Milk : 1/2 Cup
  • Oil : 1/2 Cup
  • Vanilla Extract : 1 Teaspoon

Instructions :

  1. Pre-heat the oven to 350 F/ 180 C / 160 Fan / Gas mark 4. Prepare the muffin pan by greasing and flouring it. Alternatively, You can use cupcake liners.
  2. Wash the cranberries and slice them. Add a tablespoon of flour to the cranberries and mix such that they are coated well with flour.
  3. In a bowl, combine all purpose flour, baking powder, baking soda and salt.
  4. In another bowl, whisk yogurt and sugar together. Then add milk, oil and vanilla extract and whisk well.
  5. Add flour mixture little by little to the yogurt mixture and mix well to form a smooth batter.
  6. Then add the cranberries and mix well such that they are evenly distributed in the batter.
  7. Spoon the batter into the prepared muffin pan such that each cup is about 3/4th full.
  8. Bake for about 15 to 20 minutes till the muffins are baked. To check if the muffins are done, insert a tooth pick in the middle of the muffin, it has to come out clean.
  9. Let it cool for few minutes and then remove it from the pan. Then let it cool completely.

Notes :

  • Please make sure all the ingredients are in room temperature.
  • Instead of cranberries, other berries can also be used in this recipe.
  • Baking time varies with oven. Check yours accordingly.
  • You can add nuts of your choice to the muffins for added flavour and crunch.
