Today I am going to share a simple eggless banana muffins recipe. When there are over ripe bananas at home, I either bake with them or make paniyaram/appam with them. My kids love the muffins the most. Hence I often bake banana muffins at home but each time with a different variation- Eggless, with egg, with whole wheat flour etc., I thought first I will share the simplest recipe of them all – Eggless Banana Muffins. These muffins are easy to make and can be prepared in few minutes. This recipe does not require butter too. If you are looking for banana muffins without egg, then this is the recipe for you.
Let us see how to prepare these banana muffins. First preheat the oven to 350F/ 180C. Then prepare the muffin pan by greasing and flouring it or simply use liners. Mash bananas and keep it ready. Then in a bowl, sift together flour, baking powder, baking soda, cinnamon powder and salt and keep it aside. In another bowl, add yogurt and sugar, mix well then add oil, vanilla extract, mashed bananas and mix well. Then add the flour mixture little by little to the yogurt mixture, mix gently till all the flour is incorporated well in the batter. Next add milk and chopped nuts and mix such that they are evenly distributed in the batter. Then pour the batter in the prepared muffin pan such that each cup is 3/4th full and bake for 15-20 minutes till muffins are done. You can check the doneness by inserting a tooth pick in the muffin. It has to come out clean. Then remove the pan from oven, let it cool, then remove the muffins from pan and enjoy the muffins.

Bananas (large) : 2 Nos.
All purpose flour : 1 1/2 Cup
Baking Powder : 1 1/2 Teaspoon
Baking Soda : 1/2 Teaspoon
Cinnamon Powder : 1 Teaspoon
Salt : 1/2 Teaspoon
Yogurt : 1/2 Cup
White Sugar : 1/2 Cup
Oil : 1/3 Cup
Vanilla Extract : 1 Teaspoon
Milk : 2 Tablespoon
Nuts (Chopped) : 1/4 Cup (Optional)
Preheat the oven to 350F / 180 C/ 160 F / Gas mark 4. Prepare the muffin pan by greasing and flouring it or simply you can use liners.
Mash bananas and set them aside.
In a bowl, sift together all purpose flour, baking powder, baking soda, cinnamon powder and salt. Keep this aside.
In another bowl, mix yogurt and sugar together. Then add oil and vanilla extract to this and mix well. Next add mashed bananas and mix well.
Now add the flour mixture little by little to the yogurt mixture and mix well such that the batter is smooth without lumps.
Add milk and chopped nuts to this batter and mix such that nuts are evenly distributed in the batter.
Pour the batter in the prepared muffin pan such that they are 3/4th full.
Bake them for 15- 20 minutes till the muffins are done. To check the doneness, insert the tooth pick and it has to come out clean.
Take out the pan from the oven, let it cool. Then remove the muffins from the pan and enjoy.
I have added walnuts in these muffins. You can add other nuts of your choice.You can skip them too , if you prefer.
I have used sunflower oil here. But you can use any other flavour less oil like vegetable oil, canola oil etc.,
Baking time varies with oven. Check yours accordingly. Mine took around 17-18 minutes.
Take care not to over bake the muffins. They will become dry then.
