Today I am here with a recipe for rasam without rasam powder. This is a recipe for beginners who want to make tasty rasam in minutes but do not have rasam powder or cooked dal in hand. During my initial days of cooking, I used to prepare Garlic pepper rasam often. My neighbour aunty taught once me this rasam and I really liked this version. Since then I prepare these 2 rasams alternatively. Once in a while I prepare other varieties of rasam too.

How to prepare rasam without rasam powder?

First soak tamarind in warm water and then extract tamarind juice discarding pulp. Then chop tomatoes finely and crush / finely mince garlic and keep it aside. Heat oil in a pan, add mustard seeds and cumin seeds, when they sputter, add red chillies, curry leaves and garlic and fry for a minute. Then add tomatoes, turmeric powder, coriander powder, chilli powder, pepper powder and asafoetida.  Add 1/4 cup of water and cook this for about 2 – 3 minutes. Then add the extracted tamarind juice, along with required water and salt and cook till it begins to froth. Then turn off the heat and garnish with cilantro and serve the rasam warm.

Ingredients :

  • Tamarind : About a small lemon ball size
  • Tomato : 1 no.
  • Garlic : 4 – 5 nos.
  • Oil : 2 Teaspoons
  • Mustard Seeds : 1/4 Teaspoon
  • Cumin Seeds : 1/2 Teaspoon
  • Red Chillies : 2 nos.
  • Curry Leaves : 1 sprig
  • Turmeric Powder : 1/4 Teaspoon
  • Coriander Powder : 2 Teaspoons
  • Chilli Powder : 1/2 Teaspoon
  • Pepper Powder : 1/2 Teaspoon
  • Asafoetida : a pinch
  • Salt : to taste
  • Cilantro : handful

Instructions :

  1. Soak tamarind in a cup of warm water, extract tamarind juice, discarding the pulp.
  2. Chop tomatoes and crush garlic and keep it ready.
  3. Heat oil in a pan, add mustard seeds and cumin seeds, when they sputter, add red chillies, curry leaves and garlic and fry for a minute.
  4. Then add tomatoes, turmeric powder, coriander powder, chilli powder, pepper powder and asafoetida. Add 1/4 cup of water and cook this for about 2 – 3 minutes.
  5. Then add the extracted tamarind juice, along with required water and salt and cook till it begins to froth. Then turn off the heat and garnish with cilantro and serve the rasam warm.

Notes :

  • Adjust the chilli powder and pepper powder as per your heat tolerance level.
  • Add water according to your required consistency. (around 2 to 2 1/2 cups)
  • Don’t let the rasam to boil. Boiling alters the flavour of the rasam.
