Today I am here with mushroom biryani recipe. This is a simpler and easier version of preparing tasty mushroom biryani. This one pot meal is vegan and gluten free. This biryani is simpler and does not include any elaborate process. So this is perfect for a  quick meal on a lazy day.

Mushroom Biryani

Easy recipe for Mushroom Biryani. Vegan one pot meal.

Ingredients :

  • Basmati Rice : 2 Cups
  • Oil : 2 Teaspoon
  • Fennel Seeds : 1/2 Teaspoon
  • Cloves : 4 nos.
  • Cinnamon : 1″ long
  • Cardamom : 4 nos.
  • Star Anise : 1 no.
  • Bay Leaf : 1 no.
  • Onion : 2 medium sized
  • Green Chillies : 2 nos.
  • Tomatoes : 2 medium sized (finely chopped)
  • Garlic : 4-5 cloves (finely chopped)
  • Ginger : 1″ long
  • Coriander Leaves : handful
  • Mint Leaves : handful
  • Turmeric powder : 1/4 Teaspoon
  • Coriander Powder : 1 Tablespoon
  • Chilli Powder : 1 Teaspoon
  • Garam Masala Powder : 1 Teaspoon
  • Salt : to taste

Instructions :

  1. Soak Basmati Rice for 30 minutes. Then drain excess water and keep it aside.
  2. Gently rinse mushrooms and pat them dry with paper towel. Then slice them.
  3. Do all the other preparations like slicing onions, slitting green chillies, chopping tomatoes, preparing ginger garlic paste, cleaning and chopping both mint leaves and coriander leaves.
  4. Heat oil in a heavy bottomed pan. Add fennel seeds, cloves, cinnamon, star anise, cardamom, bay leaf and fry.
  5. Then add sliced onions and slit green chillies, fry till onions turn slightly golden.
  6. Next add tomatoes, ginger garlic paste, turmeric powder, coriander powder, chilli powder, garam masala, mint leaves and coriander leaves. Mix well and cook.
  7. Then add the sliced mushrooms and cook.
  8. Add required water, salt and bring it to boil. Reduce the heat to medium high and add basmati rice. Mix well.
  9. Cover and cook till the rice is cooked. Turn off the heat.
  10. Let it rest for few minutes. Then gently fluff it up and serve.

Notes :

  • Use any heavy bottomed pan for preparing this biryani. I have used a dutch oven. You can also use pressure cooker or electric rice cooker to prepare this.
  • Adjust the quantity of chilli powder as per your personal heat tolerance level.
  • Quantity of water required depends on the quality of rice and cooking method. Since I have cooked in the pan, I used 4 cups of water for 2 cups of basmati rice. However for cooking in pressure cooker, then I would add 3 cups of water for 2 cups of basmati rice.
  • You can add 1 cup of coconut milk for additional flavour. If using coconut milk, then reduce the quanity of water. For example, if the recipe requires 3 cups of water, if you are adding 1 cup of coconut milk, then add 2 cups of water.
  • Once the rice is cooked, then let it rest for few minutes. Then gently fluff it up. If done immediately, the rice might break.

  • First wash and soak basmati rice in enough water for 30 minutes. Then drain all the water and keep it aside.

  • Lightly rinse the mushroom and pat it dry with paper towel. Take care not to soak in water as mushrooms will absorb water. Then slice them.

  • Do the other necessary preparations like slicing onions, slitting green chillies, chopping tomatoes, cleaning and chopping both coriander leaves and mint leaves.

  • Prepare ginger garlic paste. Crush ginger and garlic using mortar or pestle. Instead you can use blender or finely chop garlic and ginger and use it.

  • In a heavy bottomed pan, heat oil, add fennel seeds, cloves, cinnamon, cardamom, star anise, bay leaf and fry.

  • Next add sliced onions and green chillies and fry till onions turn slightly golden.

  • Then add chopped tomatoes, ginger garlic paste.

  • Add turmeric powder, coriander powder, chilli powder and garam masala powder.

  • Then add the chopped mint leaves and coriander leaves.

  • Cook for few minutes.

  • Add the sliced mushrooms and cook for few minutes.

  • Then add the required water, salt and bring it to boil.

  • Add the soaked and drained basmati rice.

  • Mix well. Cover and cook till the rice is cooked in medium high heat. Turn off the heat.

  • Let it rest for few minutes. Then gently fluff it up and serve.
