Today I am here with Cranberry Rice recipe. This is a South Indian style rice recipe prepared with fresh cranberries. I love cranberries so much, and when they are in season I buy them in loads and try various recipes with them. I mostly use them for baking but for a change, prepared this cranberry rice. The rice gets its tart flavour and lovely colour from fresh cranberries. I have already prepared this rice before and have posted in my other blog. Since it was too dark to click the pictures, I used my old pictures itself.

This rice is quick to prepare, making it perfect for packing it for lunch. You can serve this rice with appalam, fryums or even chips. This recipe is adapted from Spicy Treats.

Cranberry Rice

South Indian style rice recipe prepared with fresh cranberries. Vegan & Gluten free.

Ingredients :

  • Cooked Rice : 3 Cups
  • Fresh cranberries : 1 cup
  • Oil : 2-3 teaspoons
  • Mustard seeds : 1/2 Teaspoon
  • Cumin seeds : 1/2 Teaspoon
  • Onion : 1 medium sized
  • Ginger : 1 ” long
  • Green Chillies : 2 – 3 nos.
  • Curry Leaves : 1 Sprig
  • Salt : to taste
  • Cilantro : handful

Instructions :

  1. Cook the rice and let it cool before using it.
  2. Wash, clean and slice the cranberries and set them aside.
  3. Thinly slice the onions, slit the green chillies, grate ginger and keep them ready.
  4. Heat oil, add mustard seeds, cumin seeds and when they sputter, add onions, green chillies, ginger and curry leaves and fry till onions turn translucent.
  5. Add the sliced cranberries, required salt, sprinkle some water, mix well, cover and cook till it turns mushy. Turn off the heat.
  6. Add the cooked rice, mix well. Check and adjust salt as per your taste.
  7. Garnish with cilantro and serve it.

Notes :

  • You can use urad dal and channa dal while tempering.
  • You can adjust the quantity of rice as per your taste. If you prefer more tangy, add less quantity of rice and if you prepare less tangy then add more rice.
  • Adjust chillies as per your heat tolerance level.
