Today I am here with cranberry pecan bread recipe. This quick bread is soft and mildly sweet, studded with cranberries and pecans. This bread can be served for breakfast or with tea.
I baked this quick bread yesterday. My kids loved it so much that the whole loaf vanished in no time. I would be baking this again. The only change I would do next time is to replace the whole pecans I kept on top of the loaf with chopped pecans. It made it hard to slice through, they (pecans) chipped, leaving dent.

Fresh Cranberries : 1 Cup
Pecans : 1/3 Cup
Unsalted Butter : 1/2 Cup (room temperature)
Sugar : 1 Cup
Large Eggs : 2 Nos.
Vanilla Extract : 1 1/2 Teaspoon
Yogurt : 1/2 Cup
Milk : 1/4 Cup
All Purpose Flour : 2 Cup
Baking Powder : 2 Teaspoons
Salt : 1/4 Teaspoon
Wash cranberries and then chop them. Add a tablespoon of flour and mix such that all the cranberries are coated with flour.
Roughly chop the pecans and keep it aside.
Pre heat the oven to 350F / 180C / 160 Fan / Gas mark 4. Prepare the loaf pan by greasing and flouring it.
Beat butter and sugar together. Then add eggs and beat together. Then add vanilla extract, yogurt and milk and mix well.
Sift together all purpose flour, baking powder and salt.
Add the flour mixture little by little to the butter mixture and mix to form a smooth batter.
Now add the chopped cranberries and chopped pecans, mix gently such that they are evenly distributed in the batter.
Pour the batter to the prepared loaf pan and bake for 40 minutes.
Reduce the oven temperature to 325F / 170 F / 150 Fan / Gas Mark 3. Cover the pan with silver foil and bake for 10 minutes or more till the bread is baked.
Let the bread cool for few minutes, then remove from the pan. Wait till it cools completely, then slice it and serve.
Use thick yogurt for the recipe. Drain excess liquid, if any and use it.
Baking time varies with oven. My bread was ready in 50 minutes, but it might take between 50- 55 minutes.Check yours accordingly.
Instead of pecans, other nuts can be used too.
Make sure all the ingredients in are room temperature.
