Today I am here with South Indian style coconut rice recipe. This is a very easy recipe, that can be prepared in a jiffy. This is perfect for packing lunch box. Coconut rice is also prepared to offer to God during festival times. I have used onion in this recipe however if you are preparing during festival time, please skip onion. Serve this coconut rice, with potato fry, plantain fry, chips, appalams or fryums.
How to make South Indian Coconut Rice?
Cook rice and keep it ready. Heat oil, add mustard seeds, when they sputter, add channa dal, peanuts, curry leaves and red chillies and fry for few seconds. Next add chopped onions and fry till onions turn slightly golden. Now add the grated coconut and fry till coconut smell starts to emanate. Turn off the heat. Add required cooked rice along with salt, mix well and serve it warm.

Rice (Cooked) : 2 Cups
Grated Coconut : 1/2 Cup
Oil : 2 Teaspoons
Mustard seeds : 1/2 Teaspoon
Channa dal : 1 Teaspoon
Peanuts : 2 Tablespoon
Onion : 1 medium sized (chopped)
Red Chillies : 2 nos.
Curry Leaves : 1 Sprig
Salt :To Taste
Heat oil, add mustard seeds,when they sputter, add channa dal, peanuts, red chillies, curry leaves and fry for few seconds.
Then add sliced onions and fry till onions turn slightly golden.
Now add the grated coconut and fry till aroma of coconut starts to emanate, then turn off the heat.
Next add the cooked rice, required salt, mix well and serve it warm.
You can use coconut oil for more flavour. But you can use other cooking oil too.
You can skip onions, if you are preparing to offer God.
Instead of red chillies, you can add green chillies. Also you can adjust the quantity of chillies as per your spice tolerance.
