Today I am here with Coconut Milk Rice Recipe.  This is a flavourful pulao prepared with coconut milk and spices. I learnt this recipe from my neighbour when we were in Chengalpet. The other recipe I learnt from her is Chicken Biryani which I have already posted  here.  This pulao requires only minimal effort, yet is so tasty. I have always got compliments for this rice whenever I prepare it.  This rice pairs well with any spicy dish.

Coconut Milk Rice

Easy Recipe for flavourful pulao prepared with coconut milk and spices.

Ingredients :

  • Basmati Rice : 2 Cup
  • Oil : 2 Teaspoon
  • Fennel Seeds : 1/2 Teaspoon
  • Cloves : 4 nos.
  • Cinnamon : 1 ” long
  • Cardamom : 4 nos.
  • Bay Leaf : 1 no.
  • Onion : 2 medium sized
  • Green Chillies : 2 to 3 nos.
  • Coriander Leaves : a handful
  • Mint Leaves : a handful
  • Ginger Garlic Paste : 1 Tablespoon
  • Coconut Milk : 2 Cup
  • Water : 1 Cup
  • Salt : handful

Instructions :

  1. Do the necessary preparations like chopping onions, green chillies, clean, wash and chop coriander and mint leaves.
  2. Heat oil, add fennel seeds, cloves, cinnamon, cardamom, bay leaf and fry.
  3. Add Onions and green chillies, fry till onions turn translucent.
  4. Then add ginger garlic paste, mint leaves and coriander leaves and mix well and cook.
  5. Next add coconut milk, water, salt and rice, mix well and pressure cook in medium high heat for one whistle and turn off the heat.
  6. Wait till the pressure releases, then gently fluff it up and serve.

Notes :

  • I have used basmati rice in this recipe. You can also use seeraga samba rice.
  • I have used store bought canned coconut milk. You can use freshly squeezed coconut milk. Depending on the thickness of the coconut milk, adjust water or else use only coconut milk for rich flavour.
  • Adjust green chillies as per your heat tolerance level.
  • You can add green peas or other vegetables like carrot, beans in this recipe too. (add in step 4)

how to make coconut milk rice with step by step pictures?

  • Do all the necessary preparations for the rice : Chop onions and slit green chillies. Clean, wash and chop coriander leaves and mint leaves. Keep the other ingredients ready.

  • Heat oil in a pan and add fennel seeds, cloves, cinnamon , cardamom, bay leaf, and fry. Then add chopped onions, green chillies and fry till onions turn translucent. Next add ginger garlic paste, chopped coriander leaves and mint leaves and fry.

  • Add Coconut Milk, water and salt. Then add rice. Mix well.

  • Pressure cook in medium high heat for one whistle. Turn off the heat. Wait till pressure releases, then gently fluff it up and serve.
