Today I am going to share Chicken chukka Recipe here. Earlier, whenever we go to chettinad restaurants, we will order for mutton sukka or chicken sukka. But when we moved to US few years back,  we didn’t get the chance to visit chettinad restaurants there, so I tried to replicate this restaurant style recipe at home.  Now we are in UK, good restaurants are in reach, even then I prepare this recipe every now and then at home. This has been one of our family’s favourite chicken recipes.

Chicken Chukka Varuval

Chettinad style chicken chukka varuval recipe made with boneless chicken and freshly ground spices.

For Spice Powder :

  • Coriander seeds : 2 Teaspoons
  • Dried Red Chillies : 2 nos.
  • Whole Black Pepper : 1 1/2 Teaspoons
  • Cumin Seeds : 1/2 Teaspoon
  • Fennel Seeds : 1/2 Teaspoon
  • Cloves : 3 nos.
  • Cinnamon : 1 ” long
  • Cardamom : 3 nos.
  • Poppy Seeds : 1/2 Teaspoon

Other Ingredients :

  • Chicken (boneless) : 500 gms
  • Oil : 2 Teaspoon
  • Cumin seeds : 1/2 Teaspoon
  • Onion : 1 medium sized (chopped)
  • Red chillies : 2 nos.
  • Curry Leaves : 1 Sprig
  • Garlic : 4 cloves (minced)
  • Ginger : 1 ” long (grated)
  • Turmeric Powder : 1/2 Teaspoon
  • Salt : To taste
  • Spice Powder : From the above
  • Coriander leaves / Cilantro : To garnish

Instructions :

  1. Dry roast the ingredients listed under ” For spice powder ” till slight aroma starts to emanate. Then let it cool and grind into fine powder.
  2. Clean, wash and cut chicken into bite sized pieces.
  3. Heat oil in a pan, then add cumin seeds. When they sputter, add onions, red chillies and curry leaves and fry till onions turn translucent.
  4. Then add grated ginger and minced garlic and fry till raw smell is gone.
  5. Add the chicken, turmeric powder, required salt and mix well. Cover and cook in medium heat till chicken is cooked. No need to add water as chicken will release water.
  6. Then open the lid, add the spice powder, mix well and cook till the extra liquid evaporates and it reaches required consistency. Then turn off the heat.
  7. Garnish with cilantro and serve it warm.

Notes :

  • You can add ginger garlic paste instead of minced garlic and grated ginger.
  • Adjust the quantity of red chillies and black pepper, as per your heat tolerance level.
  • Chicken does not require marination for this preparation.
