Chicken fry recipe, Kozhi Varuval

I am going to share my mom’s Chicken fry recipe today. This South Indian style chicken fry is made with freshly ground spices and as chicken does not require any marination, it can be prepared in few minutes. Every Sunday I will be looking forward to eat this chicken fry. The one special thing my mom does for me after making this fry is, after transferring the fry to serving bowl, she will add rice to the pan (used for cooking chicken fry) and mix it with the masala remaining there and give me. I love that masala mixed rice. Even now she does that for me whenever she makes this fry.chicken fry recipe

First clean and cut chicken into bite-sized pieces. Grind onions, garlic, fennel seeds,  cinnamon and cloves into a fine paste. In a pan heat oil, add mustard seeds and curry leaves, fry and then add ground masala along with turmeric powder, chilli powder and coriander powder and mix well and cook for 2-3 minutes. Then add the chicken pieces along with salt mix well and cover the pan and cook. No need to add water as chicken will release water. Once chicken is cooked, open the lid and cook till all the liquid is evaporated and the masala reaches the required consistency. Turn off the heat, garnish with cilantro and serve it warm.

Chicken Fry

This is a simple South Indian style chicken fry made with freshly ground spices. This chicken fry can be prepared in few minutes and does not require marination of chicken.

Ingredients :

  • Chicken : 500 gms
  • Onion : 2 medium sized
  • Garlic : 7 – 8 cloves
  • Fennel seeds : 1 Teaspoon
  • Cloves : 5 nos.
  • Cinnamon : 1″ long
  • Oil : 1 Tablespoon
  • Mustard Seeds : 1/2 Teaspoon
  • Curry Leaves : 1 Sprig
  • Turmeric Powder : 1/2 Teaspoon
  • Chilli Powder : 1 Teaspoon
  • Coriander Powder : 1 Tablespoon
  • Salt : to taste
  • Cilantro : handful

Instructions :

  1. Clean chicken and cut them into bite sized pieces.
  2. Grind onions, garlic, fennel seeds, cloves and cinnamon into a fine paste.
  3. In a pan, heat oil add mustard seeds and curry leaves and fry.
  4. Then add the ground masala along with turmeric powder, coriander powder and chilli powder. Mix well and cook for couple of minutes.
  5. Now add the chicken pieces along with required salt and mix well. Cover and cook in medium heat. (No need to add water as chicken will release water).
  6. Once the chicken is cooked open the lid and increase the heat to medium high and cook till all the extra liquid is evaporated and masala reaches the required consistency. Turn off the heat.
  7. Garnish with cilantro and serve it warm.

Notes :

  • You can use chicken with bones too. I have used boneless chicken here.
  • Adjust the chilli powder as per your heat tolerance level. This will be medium spicy. If you want it spicier, add more chilli powder.
