Cauliflower Poriyal is nothing but South Indian style stir fry made with cauliflower. This is a easy recipe that can be prepared quickly. Also this cauliflower stir fry is vegan and gluten free.

Cauliflower Poriyal

Quick and easy to prepare South Indian style Cauliflower Stir fry. Vegan and Gluten free.

Ingredients :

  • Cauliflower : 1 medium sized cauliflower
  • Oil : 2 Teaspoon
  • Mustard Seeds : 1/2 Teaspoon
  • Onions : 2 medium sized onions
  • Curry Leaves : 1 Sprig
  • Ginger Garlic Paste : 2 Teaspoons
  • Turmeric Powder : 1/4 Teaspoon
  • Chilli Powder : 1 Teaspoon
  • Coriander Powder : 2 Teaspoon
  • Salt : to taste
  • Fresh coriander leaves / Cilantro : To garnish

Instructions :

  1. Chop cauliflower into small florets.
  2. Bring water to boil, add salt and turn off the heat. Add cauliflower florets to this water and let it remain there for 5 – 10 minutes. Then drain excess water and keep the cauliflower aside.
  3. Heat oil in a heavy bottomed pan and add mustard seeds. When they sputter, add chopped onions and curry leaves and fry till onions turn translucent.
  4. Then add Ginger Garlic Paste, turmeric powder, chilli powder and coriander powder and cook for few seconds.
  5. Add the drained cauliflower florets to the pan, along with required salt, then mix well. Cover and cook till cauliflower is completely cooked and extra liquid if any is evaporated. Turn off the heat.
  6. Garnish with chopped coriander leaves / Cilantro and serve it warm.

Notes :

  • Soaking cauliflower in hot water is optional. It is usually done to ensure that the worms in the cauliflower are removed.
  • You can add garam masala to this recipe too. Then you have to adjust the chilli powder accordingly.
  • Adjust chilli powder as per your heat tolerance level.
  • Instead of adding ginger garlic paste, you can add freshly pound ginger and garlic together and use it.
  • No need to add water for cooking the poriyal when you keep it covered and cook. (As the cauliflower was soaked in water for few minutes). If you need, then you can sprinkle some water and then cook.
  • You can add grated coconut at the end for additional flavour. I usually add it but today didn’t have it so skipped it.

  • Add salt and mix well. Cover and cook till the cauliflower is completely cooked and all the excess water is evaporated.

  • Garnish with cilantro and serve it warm.
