Today I am here with Cauliflower kurma recipe. This is a flavourful gravy prepared with ground spices and coconut with cauliflower florets. Though this kurma is an excellent side dish for chappathi, it can also be served with idli, dosa, idiyappam and rice. It is quick to prepare and tasty too.

How to prepare cauliflower kurma?

Chop cauliflower into small florets. Add them to boiled water, let it stay for 5 – 6 minutes, drain it and keep it aside. Then grind together, grated coconut, tomatoes, garlic, green chillies, poppy seeds, fennel seeds, cinnamon, cloves and cardamom into a fine paste and keep it aside. Heat oil, add fennel seeds and then add ground paste, turmeric powder, chilli powder, coriander powder and 1/4 cup of water, mix well, cover and cook for 3 – 4 minutes. Then add cauliflower florets, along with required water and salt, mix well and bring it to boil and let it simmer for 6 – 7 minutes. Turn off the heat. Garnish with cilantro and serve it warm.

Ingredients :

    To grind together :

  • Grated Coconut : 1/4 Cup
  • Tomatoes : 2 medium sized
  • Onion : 1 No.
  • Garlic : 5 Cloves
  • Green Chillies : 2 nos.
  • Poppy seeds : 1 Teaspoon
  • Roasted bengal gram / Pottukadalai : 1 1/2 Tablespoons
  • Fennel Seeds : 1 Teaspoon
  • Cardamom : 4 nos.
  • Cinnamon : 1″ long
  • Cloves : 4 nos.
  • Other ingredients :

  • Cauliflower florets : 1 1/2 Cup
  • Oil : 1 Tablespoon
  • Fennel seeds : 1/2 Teaspoon
  • Turmeric Powder : 1/4 Teaspoon
  • Chilli powder : 1/2 Teaspoon
  • Coriander powder : 2 Teaspoons
  • Salt : To taste
  • Water : As required
  • Cilantro : handful

Instructions :

  1. Chop cauliflower into small florets. Add it to boiling water and let it stay for 5 – 6 minutes. Then drain excess water and keep it aside.
  2. Grind all the ingredients listed under ‘to grind’ into a fine paste and keep it aside.
  3. Heat oil and add fennel seeds and when they sputter, add ground masala.
  4. Then add turmeric powder, chilli powder, coriander powder along with 1/4 cup of water and cover and cook for 3 – 4 minutes.
  5. Next add cauliflower florets, water as per the required consistency, salt and mix well. Bring it to boil and then reduce the heat and let it simmer for about 6 -7 minutes and turn off the heat.
  6. Garnish with cilantro and serve it warm.

Notes :

  • Adjust the chilli powder as per your heat tolerance level.
  • I added around 1/4 cup + 1 1/2 cup of water but adjust as per your required consistency.
  • The gravy splashes while cooking, so keep it covered while cooking.
